Hi everyone,
Thanks to a wonderful vegie grower I know ( not me ) I have been eating homegrown Zucchinis for weeks and need some new ideas please.
Have mostly done patties and frittatas. Am trying a new pattie which also has corn in it. You tube and the internet are great but would love to hear what others make with them.
I guess I can put them in a veg curry too? I think I will try a soup as well.

What about making a tomato based sauce with onion, garlic and maybe
thyme, grate the zucchini and make a vegetarian lasagne?
I used to make a baked frittata with grated zucchini for vegetarian daughter.
Basically just grated zooks, whisked eggs, onion parsley and baked with
cheese on the top.
That is until she decided eggs were off the agenda

Zucchini Slice
5 eggs
1 cup sifted SR flour
1 large finely chopped onion
200g finely chopped bacon
1 cup grated chedar cheese
1/4 cup vegetable oil
preheat oven 170c - beat eggs until combined add sifted flour beat until smooth add remaining ingredience stir until combined add salt and ground pepper pour into lamington tray or pie dish.
bake in oven 30mins.
Nice with a tossed salad.

Thank you everyone, some great inspiration there will give a few a go.
The slice sounds yum minus the bacon for this vego, thank you Freddie will make that in 2 trays to keep everyone happy.
