Hunter, I have a great quiche recipe if you would like one without proper pastry. It does have flour in it though.
It's called "Impossible quiche" and is foolproof. Do you have a stick blender or other other type?

Well it's not essential. Do you have maybe an egg whisk? If not a fork but it will be harder work.
I'll type up the recipe and you can have a look.

Impossible Quiche
¾ cup plain flour
40g softened butter or margarine
4 eggs
2 cups milk
1 large onion, diced
3 rashers bacon diced
½ cup grated cheese
1 sliced tomato (optional)
A couple of thinly sliced button mushrooms (optional)
1 tsp basil,
Salt and pepper
Mix first four ingredients in blender (or in your case whisk with a fork so that it’s not lumpy)
Add the bacon (or ham), grated cheese and onion.
Pour into a greased flan dish. Lay on the tomato and mushrooms, and sprinkle with the basil and salt and pepper. Bake at about 175 degrees for an hour or until set.
You can leave out what you don’t like for example mushroom or you could get all bloomin smart and add courgettes LOL
