I get these offers from eBay through their emails usually titled "Your eBay Plus member savings". However, I notice that eBay update the content of these emails after they have been sent out to reflect them current month offer only. They can do this because the email body loads an external link on eBay. Now I can't prove to eBay I got the offer because eBay has updated the email body content through that link.
This practice of changing email body content should be illegal. eBay should not be allowed to change the offer after they have been sent out via emails.

In every eBay offer I've ever seen they include the words "eBay reserve the right to cancel this offer at any time" in their T&C's, so there's nothing illegal in what they're doing.

Changing the content of email so there's no proof that the offer was sent to people is not the same as cancelling the offer. Perhaps you need to learn how to read English. Seriously!

When the offer ends, the email content is no longer relevant.
Thus it does make sense for the remote information that was only relevant until eBay cancelled the offer to be updated with whatever is now relevant.
(It might be nice to have the old offer information still to hand, but it's hardly a matter of something illegal. You could save the content as a web page (save the html) if you wanted a record of it, I suppose.)

In seller hub, under promotional offers, you can view expired offers. This used to show any recent offers you had accepted, and would allow you to view the actual offer you accepted.
