Why is GST calculated on the sale price? GST in Australia in included in the sale price and so should be calculated as 1/11 of the price, not have 10% added on the sale price. Also GST has already been paid on the postage within Australia when you post via Australia Post, so why is it being charged again?

Read the many threads about this.
The GST eBay charge on your sales fees is on the sales fees, not the entire transaction, and is required by the Australian government. So, no, they don't charge GST on postage.
They add 10% to fees for imports, again in accordance with government requirements.
GST on fees commenced in July 2017, on imports in July 2018.

If you have been charged 10% GST on the item price and postage it is an overseas transaction and the GST is added in accordance with the Government rules.
Australian sellers are not allowed to charge GST after the sale....sales should be GST inclusive.
