This is my first time selling items on Ebay, I have put ads on somewhere else too but they sold out very quick and I competely forgot tha I also put ads on here. Last night I just got reminder for the highest bidder on my items, I messaged them straight away to apologize and not to send me any funds to my account. It was 2AM in the morning!!
What else should I do? I know this sounds very bad.
Also when I received 1 reminder about the highest bidder, I tried to click end but Ebay wouldn't let me just because it was on bid/auction I couldn't end the listing earlier.

You're not actually allowed to list items on eBay if they are listed elsewhere, and as you may guess, this is one of the reasons why.
Practically, the only thing you can do is explain to the buyers what has happened, refund their money if they paid and you can not supply the item, and pretty much wait to see how forgiving they might be. You will be charged a FVF on the sale price, which you will have to pay unless the buyer agrees to a mutual cancellation (a formal process that you need to initiate - I wouldn't send one, unless the buyer was receptive to it, but many wouldn't be).
For future reference, you can end an auction up until the last 12 hours, but you have to cancel the bids first. If there are less than 12 hours to go, you can cancel bids but not end the item.

well if all 3 pair sold out before the auctions ended you are going to have 3 red dots on your feedback, and a % so low no one will bother buying from you, so hopefully it wont happen again.
