I have a buyer who purchased 3 items, and I am happy to combine postage. However, in My Sold list, the 3 items are coming up as 2 + 1 i.e. there is a combined invoice for 2 of the items, but the 3rd item has a separate invoice. How do I get them all to appear on the same invoice

If a buyer has been through checkout you can't easily change the invoice. You need to re-send the separate invoices and that unlocks the checkout and you can then send a combined invoice. I usually ask the buyer to disregard the individual invoices and to wait until they receive the combined invoice.

If the buyer hasn't been through checkout yet you can go to the last purchase and click on Send Invoice. It should bring up all of the items purchased. If it doesn't, check to see if there's a message at the top saying something like "this buyer has other items, do you want to combine them"

The buyer has been through Checkout but not yet paid. So the options you describe aren't available. And there is nothing about combining purchases anywhere I can see.

I have added a screenshot where you can see 2 of the purchases are grouped into the one invoice but the third is separate.

did you try clicking on the bottom one? "millers white" and seeing if that combines all three?
otherwise it might be as sports has said and that because they have been through checkout the items can't be combined.
maybe they went through checkout twice?
first time for two items, then the next time just the one?

It seems as though the buyer went through Checkout twice, which explains why I can't combine the invoices
