I’ve recently sold an item for $72.
I got an email from eBay saying the funds would appear in my bank account and have been paid $59.56 - this seems like a large deduction and no explanation of fee breakdown. Any ideas please

No, fees have not gone up. What you're seeing now is, all the fees in one hit. In the old days, you had your ebay fees which you paid monthly, and PayPal fees which I believe were taken at the time of the transaction. 2 years ago, in a single transaction, you may have paid $2.50 in ebay fees, and 50c in PayPal fees. Now, you're paying $2.98 straight to ebay with nothing going to ebay. It's actually marginally cheaper than what it was before Managed Payments came in 2 years ago.
Edit: Back then, you only saw the $2.50 fees because it was taken after the sale. Now, it's bundled into one. While it may appear to be more, it's no different to what you were paying when you could still use PayPal. You didn't see the PayPal fees. Out of sight, out of mind.

To be fair, SaD, OP has an impressive 4 feedbacks per year for their 14 years. Obviously they would keep up with the everchanging eBay policies.
Or not...

Ebay now charge an additional 5.5% for Below Standard sellers, apart from that ebays fees have been pretty much stable for the last 2 years.

It’s cost you $12.44 to sell that item. Plus, time to pack and post, adding cost of fuel if you have a bit of a drive to the post office.
Is this cost, worth it for you?
I don’t sell on eBay and haven’t done for over 10yrs. (I sell on other platforms)
I’ve always thought the fees were too high, while others think it’s reasonable.
Each to their own, and what ever works best for you, is what you need to think about.
