I knew it was too good to be true, because I sold something at a great price I was happy with. Now the buyer says it hasn't shown up. Will paypal give them my money now?

PayPal will grant a refund (from your funds) if you can't prove you posted it, whether or not it arrived is irrelevant to that.
If you do not have proof of postage, then you will more than likely have to fund the refund.

If you have documentation that proves an item was lodged with the post office or other carrier, then registered is not a requirement, but it is usually the simplest way for most to get a lodgement form that shows enough detail to qualify as proof of postage.
It's possible to successfully defend an INR claim with a standard receipt, and it needs to show at the very least the destination postcode that matches the buyer's address, which it generally will on parcels (as well as have a tracking number), but it won't for letters.
