I sell a variety of items on another ID and would like to offer flat rate postage regardless of the number of items bought.
I can see that I can achieve this by placing $0.00 in the 'each additional' box but, does it only work if buyer buys more than 1 of that item or does it work if buyer buys different items? I'm wanting to achieve he latter.

You are correct in that adding 0.00 for additional items means that there will be a flat rate price for that item regardless of number purchased.
I also send by satchel and in my experience when a buyer purchases different items ebay does not show postage at all and it is up to me to send an invoice with combined postage.

So do you get buyers thinking there is no postage and paying before you send an invoice?

as well as adding 0.00 for the listing you can set up a combined postage rule so that all different items can be included.
You may need to add the option in the postage section when creating a listing.
