Unless you're a store, you can't
Extend your handling time is about all I can suggest

How about doing a bulk edit? Do 25 at a time - edit description - find and replace - add the phrase about being away
the system will put it at the bottom of every lsting.

I needed to do the same thing earlier this month. I have a store & non-store selling IDs.
My store was put on 'holiday' settings. Easy...
This non-store ID was a bit trickier. I'd closed the store for the ID as it was more economical to use the 'free' listings since they now have the option of GTC or 30 day & I usually have 20 odd listings per month.
You can 'hide' your non-store listings while away...not exactly the same as holiday settings in a store...but better than ending them & losing any previous purchase history.
First you have to activate the 'out of stock' option on your ID so your listings won't stop when you change the stock levels to '0'.
Then edit all stock levels to '0'. When you want the items 'viewable' again - edit the stock levels back to '1'. Don't forget to change the 'out of stock' option back to 'no' - otherwise you'll be paying for roll-over listings if GTC.
This is system is only good for a 3 GTC roll-overs - then ebay finishes your listings.
A bit messier than a store - but as I'm usually only away once per year & it worked for me.
