For the life of me I can't see where I show that my item has sold, and how to give feedback on the buyer.

If it was sold on ebay it will be in your sold list.
While in your my ebay page look to the left and go down till you see Leave Feedback and click on that and anything you have yet to leave feedback for will show there.
Feedback can not be left after 60 days.
Have you got your sold items to show for 60 days in your sold list?
You might need to change that if you want them to show longer before they are archived.

You may need to adjust the settings of your myebay page to ALL SELLING to show current, scheduled, unsold and sold items.

Thanks Sparklz for the info on where to find the Leave Feedback link, and apologies for delay in reply!
Your answer tells me where the sold items are seen, but not how to indicate that I've finished my sale, so the selling process is brought to an end. Perhaps I do that by clicking the End button in my Active Selling window? I ended up phoning Ebay and so problem was solved in the end, but now I'm selling another item, and I can't recall what I was told. Perhaps I clicked Actions link in the Active Selling window, which gave me an option to finish the sale.

If you are selling through eBay, once the buyer has paid with Paypal the item will be automatically marked as paid. And the listing will end unless you have multiples. You then mark it as posted when you have, and leave feedback when you wish.
If you're deleting items from your active sales list to show as sold then you are not selling them through eBay and would be ill advised to advertise the fact.
