When you list your item and go through the process, there is a part that says how many do you want to list, all you do is put in the amount you want listed.
This only works for BIN it doesn't work for auctions.

Don't you have limited listings?
Probably the reason you can only list one - for now

NB: If you're the seller, you always see the exact quantity in a listing, everyone else will see "more than 10..." if you have that option ticked.
Just in case the issue is something else... this option is all about the difference between telling eBay how many you have to sell, and eBay displaying to buyers how many you have to sell.
You can't give eBay an unspecified quantity; "more than 10..." doesn't tell eBay how many you have, i.e. if you were able to say to eBay just "more than 10" they wouldn't know how many to make available to buyers - could they let someone buy 15 or 150?
So, if you have 200 of an item, but don't want people looking at the listing to immediately see exactly how many you have, then you use this option. You still put 200 in the quantity field as normal, but as long as you have that option ticked, buyers will just see "more than 10..." when they look at the listing.

84 listings so what's OPs limit then?

Going by the 5 million other threads OP has started - 100

Also, it will stay 100 until OP gets 50 or more fb for selling
Regardless of paying for a basic store of 200 listings
