The only advice is that I am able to do it by going into my ACTIVE listings, however, I can only find a REVISE which will then only allow me to change the items listing category, not my store category! The only way I know of doing it is to end the listing but this obviously incurs MORE fees and as it is an auction listing, not something I really want to do!
