Someone nought a book on Tuesday but did not pay for it or complete checkout. Today I sent what I would call a friendly reminder. I did not demand immediate payment, simply asked the buyer to get in touch about payment. Buyer paid and sent a snippy message saying she would work to her time frame THANK YOU. Not happy. I have sent three message about ebay's policies and procedures (buyers are expected to pay within four days of sale date), the fact that silences extending over days indicate possible non-payment and that if she is not happy with my service I will gladly refund her payment immediately and apply to cancel the sale. Indeed I do not want to sell to her and feel like refunding her payment in any case. But don't know if Bad Attitude is a good enough reason for ebay to cancel the sale. I don't care about getting back lost fees.

After sending me multiple emails (including the ebay auto ones) and you sent me a mutual cancellation I would refuse which would result in you having to pay the fvfs and the buyer having the right to leave you neg feedback.
I would email them with an apology, say you were having a real bad hair day and you would appreciate them paying within the next couple of days so you can post their item off. I would then send it asap with full tracking and if they still left a a neg would accept it was deserved for my lousy customer service.

I agree with Junkie.
With the buyer having paid, you are especially locked in.
Rather than inflate the situation even more, just send the tiem with tracking so she can't play shannanigans with INR. With luck, she will love the item enough she won't leave neg fb or defects. Any other course and it is going to go much worse for you and you only. IMO an apology would be well worth the outcome of averting a neg.
I know you feel upset by her attitude. Please step back and take a breath. Whether it is justified or not, it's not a valid reason for cancelling a sale, especially after payment. IMO you would be doing the old proverbial "nose" and "spite face" mistake.
Other sayings... it's not personal, just business.......

Its a sale with a person you will ever meet face to face. Let alone be bestys with. Its a customer.
Be the bigger person, and send the buyer their goods that they paid for.
You got a sale .... they paid. .... thats good round here.
