What happens after that is not in your nor your buyer's control. And why do you care? Don't sweat the small stuff.
Remembering that how you look at it is dependent on whether or not you use your selling account to view.
But given AP quote 2-7 business days for everything anywhere, eBay's estimate would certainly be aligned with that.

Because ebay estimates have no basis in reality most of the time.

The wide estimate range is to provide a bit of hopeful marketing (without promising anything) to the buyer. After all even though buyer selects regular post seller might just express it, so its not impossible.. The latest date "should" at least be in alignment with AP. Becareful that any estimates you check are not using your own location eg that given on your listing when you look at it. Use that on order details once sold.
