Register with and use click and send as that gives seller protection with postage and no signature required and it is all paid for on line.
If the items fit in the 500gm or 3kg satchels then buy the satchels on line via ebay and go from there.

You should only offer trackable postage. You leave yourself open to these disputes with no recourse. I agree Paypal should only cover trackable items BUT they should also make the seller pay for return postage if a dispute is found in the buyers favour and the item has to be returned. Of course this would not cover "change of mind" buys.

THe Postage times are so ridiculous, potential buyers actually think it's seller putting them on.

Don't blame ebay for the postage times, that information comes from AP, unless you are using the free post, 30 day refund and one day handling time to try and rise in the searches just add a couple of days to your handling time. Ebay's estimate is APs figure plus your stated handling time.

It's not a far stretch to blame eBay when they say stuff like "...we can reasonably determine it will arrive in X days" (a - probably paraphrased but relatively accurate - quote from the info page on Fast & Free). There's no mention of basing their estimates on AP delivery times, and in fact AP added a day to their average expected times a while back but AFAIK eBay's estimates didn't change. I don't think it helps that the eBay branded C&S satchels now display on listings as "eBay Postage" - like they have anything to do with it in real terms.
At least it's not as bad as in the US, where buyers are told quite specifically that a "good faith dispute" with a seller includes instances where an item doesn't arrive within the estimated time-frame displayed on eBay.
