have a slight problem, buyer made an offer on an item about to end but I received it too late, I messaged the buyer to let her know the offer was acceptable and the item had been relisted. The buyer then bought the item at the full price obviously by mistake.
How can I change the invoice to the offer price? Any help would be appreciated thanks

You can't. If the item has a paid postage rate, you can deduct it off the postage, but if it's free postage, you can't reduce the amount. All you can really do is send a cancellation to the buyer, then relist the item at the reduced rate. Of course you should ask the buyer to accept the cancellation request and explain why you have sent it. Tell them to stay online while you relist at the reduced rate and then send them the item number so they can go straight to it and buy it.

what if I just sent her a paypal invoice and then marked the item as paid (when she pays of course)?

That is an option, just keep in mind that you will still pay eBay the FVF on the full sale amount.
