To claim input credits on my sales I need a statement for eBay/PayPal of GST amounts remitted to the ATO ffom my sales equivalent to a PAYG certificate. Is it intended that the sales invoice generated by PayPal served thid function?

Ebay do not deduct GST from your sales.
If you sell to certain USA States, and probably some other countries, Then ebay will collect the relevant tax from the buyer, and remit it to whatever international authority is appropriate.
As an Australian buyer, if you buy items from overseas, then ebay adds the GST component, which is collected from you, the buyer, and remits to ATO.

Input credits apply only to purchases (ie inputs for your business) - not sales.
Would seem like you need to go and see an accountant?
