In my Site Preferences I've selected "no" to this question:
Show the exact quantity of items in your listing, if the quantity exceeds 10.
However, I can still see exact quantities >10 in my store listings even when I'm logged out. Could someone check for me? Are you seeing "More than 10 available" on these listings, or are you seeing the exact quantity?

Great, thanks. I must not have been logged out properly or something (I can't actually figure out how to log out of eBay). So it looks like I can see the exact number, but buyers can't.

I had the same question some time back and spent a considerable amount of time trying to explain to ebay help what the problem was only to have an answer within 10 seconds from a helpful ebayer.
Ever since I prefer to ask the question on the discussion boards first;\

Up in top LH corner you will see G'day then you name.
Hover your mouse over the down arrow and click on LOG OUT
That will log you out and you will need to sign in again when you return.
