Regardless of what the blurb says - ebay do not read nor respond here.
I have had trouble deleting my watch list also, but if you log into ebay.com
https://www.ebay.com/
you can delete them there.
Don't forget to log out.

Does it say "deleted" but the items still appear in your watched list? If so, refresh the page and they should be gone. At least that works for me. It's the little curly arrow at the top left of the page.

Try double clicking on the Delete button.....that has worked for me in the past.

Are you using a phone? Phones have limits and many things will not work online that will work using a laptop or desktop computer.
