No, 5 hours is not slow for a business reply. I'm guessing you're used to buying things on marketplace where you might be able to have back & forth chat with a seller within the hour. Sometimes that might happen in certain businesses too, but it is not a given. Always allow 24-48 hours for a reply. That way, it will be a pleasant surprise if you get an answer earlier.
You don't have to worry about when an item is posted. That is the seller's worry.
Your ebay ad would have shown (and will still show) the expected delivery date range.
That is all you need to pay attention to. If that date passes, you can then go into ebay and open a claim for an item not received.
You would have seen the expected delivery dates in the ad when you ordered & realistically, those are usually accurate. It can be a worry if you're waiting for signs something is in transit & don't see any, but all that matters is if the item actually gets to you on time.
As for the other item you ordered that showed it was 'on its way' the same day as ordering, maybe yes, maybe no. It could be that the seller simply generated a postage label. Did it show as lodged at Auspost?
Even so, it makes no difference to your earlier purchase.
If your seller has a reasonable feedback record, then most likely your item will arrive in the estimated time frame so don't panic yet.
