Like many listings, the handling time isn't shown in the listing & is only incorporated into the "estimated delivery dates" Ebay's fictional delivery guesstimates.
But ...... their feedback does mention a certain lack of speed in posting at times.
Also, did you choose the express post option (at an additional cost) when purchasing, or just accept the free postage and expect the items to be posted immediately?
When you need something in a hurry, it's probably best to buy at a local bricks and mortar store rather than relying on speedy postage and delivery from online sellers.
Just wait the 7 days and leave the feedback you feel is accurate - the wait will let you cool down a bit and possibly word the feedback a little more diplomatically than you would at the moment.

So what do you expect to happen at 7.37pm. Not all sellers are stupid enough to be processing orders at all hours of the day and
night. Did you contact the seller at all prior to purchase, or just expect that your order will receive special treatment and be processed
before all others, because it only took you 1 minute to pay. Was the order shipped within the sellers handling time, If so why request cancellation after the item has been shipped, and is then at the mercy of Australia Post. Get real, wait for the item to arrive and if you are still not happy you can request a return, at which time if the seller agrees you may be responsible for some charges. So far, I have not seen any reason, for you to be considering leaving the seller negative feedback and in all likelyhood the seller could easily have it removed, as your expectations appear to be totally unrealistic.

I suspect you may no longer be a customer of many sellers. The ones who have read this thread, probably, plus the one you have unrealistic expectations of.

".. i ordered at 7:35 pm on Tuesday & paid at 7:36 pm..."
Handling time is based on business days, and that means business hours. Unless the seller specified next day despatch, or offered Express Post as an option which you selected and paid for, you don't really have a leg to stand on here.
