Holiday Favorites

  I've been reading, and watching shows about food around the world, it's diversity and its similarities. And with Christmas coming, I thought I'd ask what your favorite special to the holidays dish is? 

  One of mine is Whoopee pies, one of my DILs is from Pennsylvania Dutch country and she makes them for us only at Christmas. They are so goood!

Those impossible quiches are almost foolproof and very tasty.

I see that lyhargr mentioned she cooks the onion and bacon before adding to the quiche. I always do that too.

 

If you want to make a vegetarian version you can use the same recipe and just swap out the ham for other vegies. I often make it with mushrooms (sauteed) and a mix of other things as I have a vegetarian daughter.

Thank you springy! So it's pretty versatile for ingerdients then. The mushrooms will work instead of ham or bacon, for the vegetarian and non-pork family members.

I tend to saute any ingredient I am going to add to the quiche,  I use frozen corn, so I zap  for 5 mins before I add it, I think that cooking the ingredients first, give them more flavour. This recipe are so versatile,  I  think you can add  ( almost ) and ingredient you like to it.

This one last night - threw in left over chicken, corn off the cob, and half a pack of left over stir fry vegs - with a dash of Sweet Chili Sauce.

 

Not much left.

It would appear there is a glut of eggs around here, friend arrived this morning with 2.5 doz of 'em, which added to the 2 doz I already have makes for a LOT of eggs. Now to figure out what to cook with them, thinking, thinking ..............

Found a recipe for bacon and egg muffins, might give that a try, could also add some grated zucchini to them, have a zillion of those as well ................

Fritattas can be cooked and frozen like your quiches, plus you can freeze raw eggs out of the yolk quite well. Hope that helps!
