Divide the sweet potato into 30 portions.
Eat one portion for breakfast each day. Record your health and mould levels on sweet potato each day.
On the day you feel nauseous, record it in your experiment diary.
Then, next time you make excess mashed sweet potato, you'll know how long it will be safe to eat.
You could use CS as your daily experiment log ....eloi's emoticon....

My first thought was that if you eat it, it won't then be in the fridge.

ora, you should be right for 3 or 4 days.
Just keep an eye and a nose on it. If it starts to smell offensive or becomes slimy, I'm sure that you know not to consume it. There are lots of variants including what temperature your fridge holds, how big the batch/portion size is and the method and what length of time was taken to cool the sp after initial cooking.
But the 3 or 4 days should be right, especially if you keep it covered and use clean utencils to minimize the risk of cross contamination.
Some people can go their whole lives and never really live for a single minute.

I was thinking further about the experiment. They could use ice cube trays. Three of them... Which means the experiment should last 36 days, or it'd be too confusing ๐
