you need some sweet red bell pepper,just sweat it with the onions.

My potato salad is just mustard mayo and chives.

Yep thats exactly what I've done, I dont have any sweet red bell peppers but I do have some sweet chillis that are similar in flavour to bell peppers but just a tiny bit more spicy. I need something red to put in, I wont worry about the gerkin, I think you were right imastaka.

As summer wears on....and we start getting really bored with salad *same old-same old............
I make a large batch of potato mash spread on a platter/plate or shallow dish 'mark' top using back of a fork, mix up some homemade mayonnaise or just use branded mayo and spread thinly over top of mash.
Finish and decorate with jar capers.
Chill in fridge.
Slice and serve with meal - yummo!
Great with BBQ meat and green salad

That sounds like an interesting dish Paintsew.
My Nonna used to make torte. It's an Italian dish made with mash potatoes, napoli sauce and chopped celery leaves mix them all together spread out on a baking tray, run a fork over the top a few times and bake in the oven for 20 minutes or so, that was delish and the smell is amazing, sprinkle a bit of parmy cheese on top in the last 5 or so minutes.

Yes 2ndhand.... ....pretty sure my Mum started making this after we had a holiday in Spain when I was little, so it's obviously not a new idea/recipe going by your similar one.

i LIKE you,secondhand. you know how to REALLY make a tomato rose,yay!! you should see some of the butchery i've thrown in the trash over the years...
oh! and it does look good! but really,i have to ask,as a yank. why do you cook your onion first? honestly,the only reason i said to cook the pepper was because you DO cook the onion? that's strange to me,unless it's hot german potato salad?

Yay someone noticed my pretties on top lol.
You know as I was chopping it up I was asking myself the same question. Specially seeing as its spring onion it is nice raw. The smell is lovely while it's cooking um.... yeah dont really know tbh maybe I'll try it raw next time I make potato salad in like in 5 years from now lol Thinking about it I havent made it very many times hence why I came here for some extra advice. 🙂
