Sharing a wonderful cake recipe I received from a neighbour.

my neighbour made this cake and it was one of the nicest cakes I have ever had

So here is the recipe

Hazelnut cake

3 eggs
1 cup caster sugar
1/2 cup oil ( not olive oil). She thinks she used ? Rice bran oil ?
1 cup flour
3 1/2 tsp baking powder
1 cup "lucky" ground hazel meal (available Woolworths or IGA)
1/2 cup Nesquick ( for best flavour )
1 cup sour cream

Mix eggs and sugar well, slowly add oil and then all the other ingredients.

50 - 60 minutes. At 160 - 170 oC. 20 cm round pan

I think the lady that gave me the recipe said to beat extra well after adding oil, but I will check on that.

Then add chocolate icing and dot toasted hazelnuts with their skins removed, around the top of the cake

She couldn't remember how she did the icing but it looked glazed and a thin layer of icing, and was delicious.

Any suggestions for doing the icing ?

She said she sometimes will split the cake and add cream between the two layers for an extra special touch.
