sin, re -  saddle of beef.     Not as Aussie cut, as far as I know.

Looking at diagrams, I would say we call that piece a Loin of beef

Trying hard to get a diagram of our Aussie cuts, but they seem to

be all pdf's

On leaving the chicken whole I meant sometimes bone it for the boneless breast but sometimes use that whole as well.

donna, since nobody here eats dark meat,i don't buy whole chicken or turkey anymore. i can usually get "stock" meat for about 50 cents a pound(necks, backs, wing tips, bottom ribs,etc..),and my friends keep those scraps and get good stock in return. for everything, not just chicken, lol!

Why do I think I heard that from England?   I used to love those "Two Fat Ladies" shows.

Re: minced meat recipes,of any kind!

I am not familiar with 'saddle' used for meat. I haven't seen meat for sale called that. We have lamb loin chops and they are very expensive. I would think a lamb saddle roast would be top of the price range.

Google:

A saddle of lamb is a double loin roast, which combines the loin roasts from each side of the lamb. Ask your butcher for the bones from the saddle to make the sauce.

The saddle is another roasting joint and is usually done on the bone, although the loin can be boned for steaks or noisettes. It can also be cut into chops.

Re: minced meat recipes,of any kind!

A saddle of beef wouldn't fit in an oven.

Saddle - a cut of meat consisting of part of the back bone and both loins ( especially mutton or lamb)
