Can I change my listing to 7 days . have accidently put 3 days-this was meant to be handling time!
There are not any bids but there is 1 watcher. I tried to change it but it said it cannot be done after 2 hrs of listing. Can I end the auction and relist it?

Yes, over to the right of your list of items for sale there is a "more actions" drop-down menu. Just choose "end item" and the appropriate option that comes up. Then relist, and make sure you put in the correct number of days. The watcher on your item will see on their watch list that the item has ended, and been relisted.

From what I recall having tried this recently, the End Item action from that drop-down menu doesn't work for auctions. It only applies to Buy It Now format items.

There is NO such option as "End Item action". The title for the drop down menu is More Actions, but the selection offers the option to END ITEM, and you can certainly end it whether it is auction or BIN, provided there is more than 12 hours left. I have done that on several occasions.

Actually, you're wrong. Firstly, the title for the drop-down menu is called Action. From there, you can select the option called End which ends BIN listings.
Secondly, this is a direct quote from eBay regarding ending an auction through the End action as described above:
"These listings cannot be edited, because of following restrictions: Item #(removed) - (Title) This feature cannot be used with this item because it is an Auction-style Format item."
Vent your frustration by reporting me for "you know what" (as that must be the only reason why you replied) rather than trying to correct me on a relatively simple thing.

Well, I have just ended one of my items that was listed as auction. I did it from My eBay listed items, from the drop down menu with title "More Actions", selected "end item" then ticked one of the options (mistake in listing), and it is gone.
thesoulyearns have no idea why your eBay has different words and why would you not be able to remove auction listing; unless you are logged in on eBay.com or other country, which might be different. Maybe somebody else may know the reason?
And the reason I replied is to give people with not much experience on eBay the correct answer.
