And also, if they buy the item with the intention to say they never received it, just to get revenge on me, in what ways can I remain safe? I believe if I send an item registered post, I'll keep my money as long as I can prove it (i.e. tracking number) right? And if they say it's not as described, they HAVE to send it back to me by registered post before they can get their money back, right?
I cancelled a bid on one of my expensive items I'm selling because I didn't trust them (brand new ebayer), and they've bid again with 5 hours to go (my mistake for not blocking them too). So I suspect they'll pay for it, but I just want to remain safe. How can I guarantee I'm protected?

Send via registered post and if you are really worried pay extra to get the person it is addressed to as the signature required.
And if they pay with paypal and open a dispute for item not as described then reply to the dispute in detail why the item is as described and take photos of every angle before packing and of the packed addressed package as well if you are really concerned.
Keep ALL paper work stamped by the PO as proof of postage and once posted enter the tracking number into the sold item and enter it too paypal.
That is all you can do unless they open a dispute then come back if this is what happens.

Why do you suspect this buyer? We all had to start somewhere, and if you have all the appropriate blocks in place they would have to have their account verified before they could bid on your items. Are you blocks in place?
To protect yourself send it in a box, well wrapped in bubble wrap, so it is not obvious what it is. Send it registered and insured to its full value. Best would be to process it through click&send, that way the tracking will be automatically entered into the system for PP

If you really don't want to sell to this seller you can cancel the bid again, and block them immediately afterwards before the auction ends.
This may not stop them using another person's account however, now or in the future so I would definitely follow the other advice here to protect yourself with any subsequent sales. You may also like to add to the description that registered post is a must with insurance (if that's how you decide to send the items), just so buyers are aware of the extra postage and fees prior to bidding.

JMO but I'm astonished they bid again-I wouldn't have.If I were your bidder & that happened to me,I would be asking you why & asking ebay why.
Unless they have some blatantly obvious 'issue' ie bidding on hundreds of expensive items,registered in Nigeria etc no way would I have cancelled their bid.
If all sellers cancelled all bids from new ebayers,the site would literally implode as everyone started on 0.
