I have checked back through older threads about this, and based on the suggestions provided, ebay in their wisdom have changed the process since this was last answered.
So how do you stop immediate payment when someone buys an item? if they want to combine postage or want to pick up?

trying revising a listing and look under payment options?

Although I don't know why ebay would interfere with your listings on that account - I thought anybody could choose "immediate payment" if they want. Maybe someone else will know.

Clicking the links in the email takes me to random eBay help pages which don't have any menu paths or screen shots which would help identify where to untick it or what the option is even called! So frustrating.
I looked at your two recently ended listings and neither of them required immediate payment - whatever is causing eBay to end your listings, I suspect it's a different issue and the immediate payment thing is either a misunderstanding or something, since (as curraone mentioned) immediate payment required is not just a function eBay allow, but both encourage and, in some cases, even enforce.
You don't have GPay listed as a payment option, though, which suggests that you have not been signed up to Managed Payments yet (ebay's new payment system), so that could be the root cause of the problem.
