Ive reopened my store after a six month break and noticed a few differences
I used to be able to retrospectively adjust the sent date of mailouts.
Ive sent out the item within the time frame (yesterday) and updated the information this morning (showing as a day late), does this rectify itself when ebay realises the date the package was scanned?
Also, I used to have a very different sellers page/dashboard, I can't set the closest thing to what I had (looked a bit like selling/sold page), am I missing something?

No, it's up to the buyer to check with the tracking number to see what progress has been made in the delivery.
Also with the delays in shipping time at the moment it would be a good idea to extend your shipping time to at least a few days, or you're going to end up with late delivery problems. Remember eBay puts in a "guesstimate" on delivery time which often is not taking into consideration delays due to COVID etc.
