I can't answer for what happens with a phone but I can be logged in on my desktop and not my laptop and vice versa. Two different devices should work individually not as one.

If you are using the app, it pretty much keeps you logged in.
So, no. The finder of your phone will be able, if they care and you haven't had the entire phone rendered inoperable, to access your eBay account.

As Dave said, whoever has your phone can access any of your apps. If you can't brick your phone remotely, change all your passwords immediately e.g eBay, PayPal, Facebook etc. In future, have your home screen passworded. It is annoying initially, but you get used to it and it becomes normal to put it in each time you want to use your phone. Obviously there are some that could get through that, but the average person wouldn't be able to.
Have you tried looking for your phone using where's my phone? I thought I'd lost my phone. I looked for it and it was about 6 metres from where the program said it was (in my back yard!). I haven't used it for ages, but I'm pretty sure you can brick it from there too.

Just log into your account and change the password,(then the phone password should fail).

For future reference have a look at Prey Project I have it on my phone, laptop and tablets.
Have you reported the phone as stolen and had it blocked so nobody can easily use it?
