Because it only shows when there are 2 or more watchers on a listing. 1 watcher does not show.

I don't think the OP is talking about the watcher number inside the listing. (every listing provides that)
The op from what I gather is talking about when in search, which is what my answer above is referring to.

If you are talking about the view counter, that is a different thing.
The number of watchers is when a potential buyer clicks 'watch this item' and then it is on their watch list.
It only takes one person to watch an item and the listing will show '"1 Watcher"
Otherwise I have no idea what you are talking about.

not talking about view counter. Not talking about when you open a listing.
I was talking about when you are searching it says 2 watchers. etc. but sometimes it doesn't show. and from what I can gather it takes 2 plus watchers.
Here is a screen shot for you poppy
in this example both have watchers, on the top one it is displayed in search, the bottom one it is not. When you open the bottom one though it has one watcher
