Tas mentioned there was a good thread on - What's for Dinner.

 

Seems it ended up - a bit ' snooty '.

 

So - no fancy - dancy - stuff - just good fresh ideas for dins.

 

Oh - & Freddie - just loved the zucchini slice - if you could just put it here one more time - I swear not to lose it again.

 

And please - this time add the - zucchinis. lol.

 

Here - tonight - Chicken Schnit's with salad.

Eating out, Thursdays usually a roast dinner, hoping it is Pork.

 

Made some slices this afternoon.

When we get home I'm going to have one, or maybe two.   Smiley Happy

Not dinner but took mum for lunch at Warrook farm.

Beautiful homestead built 1856, furnished and you can still go through looking at how they lived back then.

W.C. Greaves was a livestock judge and breeder.

 

Slow cooked roast beef with a sensational gravy.

Easy Minestrone -

(for those who have fractured ankles and can't stand on one foot for very long.)

 

Packet Woolies Simply Simmer vegies. (I think Coles have chopped diced vegies too)

Tin diced tomatoes or whatever you've got (puree is fine)

Tablespoon tomato paste

Oregano, basil. Salt, and a pinch sugar.

Stock cube - whatever - chicken/beef

Handful of small pasta 

Tin Kidney beans - well rinsed.

 

Throw it all in a big pot and cover with water.  Bring to boil, and then simmer.

Give it a stir every now and then and taste for salt etc.

 

It should take about 45 mins to cook.

 

Have it with crusty rolls.

 

Makes about 4 big bowls, depending on how much water you add.

 

Top with parmesan cheese, when served, if liked

Normally, I would fry chopped bacon and onions and garlic first.

And I like swede and turnip in soups too.

 

 

Cooked it this arvo and having it for dinner tonight.

Last night it was...... "Make your own Pizza night".

Have one of these every 4 weeks or so, invite some friends over. Always a fun night.

 

Afterwards, it was a homemade baked passion fruit flavoured Ricotta cheese cake & Passion fruit coulis.

Perhaps not an actual cake but a slice.

I bake the cheese cakes in a 18cm square spring loaded cake tin.

Sorry folks, only have 3 slices left.
