Tas mentioned there was a good thread on - What's for Dinner.

 

Seems it ended up - a bit ' snooty '.

 

So - no fancy - dancy - stuff - just good fresh ideas for dins.

 

Oh - & Freddie - just loved the zucchini slice - if you could just put it here one more time - I swear not to lose it again.

 

And please - this time add the - zucchinis. lol.

Yesterday, daughter made Chicken Kiev, with rice to soak up the butter, carrots and beans.

 

Then for afters, we got chocolate mud cake and ice cream.

 

Tonight , at home, we're having spicy chicken wings with fries topped with sweet chili sauce and sour cream.

 

Should really just rub it straight on my belly with all that fattening stuff.

Tonight I made a rather cosmic potato rumbler!   I saw it on YouTube and there it was called a 'çhicken stuffed potato'.

 

Trouble was, I didn't have any chicken so that metamorphosed into bacon, and whatever ingredients I didn't have became substituted for whatever I did have, which means that the stuffing of the potato was dechickenised at the very least.

 

However, it must be said that what came out of the oven did actually bear some close (visual) resemblance to the original, but that was about it.  None the less, it was tasty and happily gobbled upon ...  Woman LOL

I missed having fish last night, didn't feel like anything.

On the way home earlier, I stopped at the fish shop, and as I am home by myself,

It is fish & chips for one.Smiley Sad

For the PREs, (Pork Rib Eaters)

 

Here is a recipe that isn't to difficult to put together.

 

My youngest son & his girlfriend tried this.

They cooked it for my sister, and she was impressed (in the past my sister was head cook at a club)

(my son & partner aren't the best cooks, and that is being very polite  Smiley LOL )

 

Buy the Pork Ribs 1.5 kilos ( will serve 4 or 5)

 

What you will need:

1 x Can of Coca Cola. ( it must be Coca Cola)

 

2 x Tablespoons of Worcestershire Sauce.

 

1/2 Cup of Sweet Chilli Sauce.

 

1 x bottle of Hoisin Sauce (Bottle sizes vary but are usually in 280ml or 320ml)                                           

   Only use half a bottle. If you want the sauce to be more watery, add a bit more)

 

2 x Cloves of crushed garlic

 

2 x Tablespoons of White Vinegar

 

Chilli Flakes (add this after you mix the other ingredients. Sprinkle as per your taste)

 

Ready to go:

1.  Preheat the oven to 180 degrees.

 

2.  Mix all the ingredients together in a large bowl, (except for the ribs). 

 

3.  Add the chilli flakes to your desired taste.     

                                                                                                

4.  Place the Ribs into the bowl with the sauce and spread the sauce onto them.

                                                 

5.  Cover the bowl with Gladwrap and marinate for 1.5 to 2 hours in the fridge.

 

Next Step

1.  Place the Ribs & marinate into baking dish, and spread the marinate and ribs evenly,  and cover in foil.

 

2.  Into the oven on the middle shelf and bake for 1.5 hours then turn the ribs over and mix them around in the sauce.

 

3.  Cook for another 30 mins.

 

Next Step

1.  Remove from Oven and take the foil off the baking tray.

 

2.  Place back into oven for another 30 mins. Turn the ribs over every 10 mins or 15 minutes. This 30 mins is to thicken the sauce.

 

Last Step (important)

1.  Remove from oven, plate up with what ever else you have planned to have , and start enjoying.

 

2.  We usually spoon out the rest of the sauce into a cup and then can add more to the ribs if you want. 

     (or if you are uppity,  you might wish to use your Royal Doultan gravy boat Smiley LOL

 

Note: it doesnt' matter what brand of Hoisin you use, we have used different ones and cant tell the difference.

Even the gluten free is ok.

The Ribs, I made a terrible mistake.

I have the preheating the oven in the wrong step.

It is quite obvious,  but need to clarify it, and let you know.

Tonight I had to try the advertised subway Aussie lamb with tzatziki.

Not bad but wouldn't run out and get it.

 

As far as junk food, I still think the Grilled classic angus at Hungry Jacks is one of the better.

we are both full of roast pork, crackling, yorkshire pudding, and roast potato,carrot and onions

 

no more for us today , prob a glass of milk at cot time 

 

it was a really nice piece of meat and one of the best cracklings ever

 

funny how they differ when cooked the same way every time

that's interesting kopes i love roast leg of lamb but cant ever eat it cold or reheated 

 

weird i know but it makes me feel sick , hubby has to finish it of when we do have one 

 

we really liked that chicken special subway , but it's finished now i think Woman Frustrated
