Tas mentioned there was a good thread on - What's for Dinner.

 

Seems it ended up - a bit ' snooty '.

 

So - no fancy - dancy - stuff - just good fresh ideas for dins.

 

Oh - & Freddie - just loved the zucchini slice - if you could just put it here one more time - I swear not to lose it again.

 

And please - this time add the - zucchinis. lol.

 

Here - tonight - Chicken Schnit's with salad.

Making porcipine balls tonight with mash.  Vegies will be hidden in the balls for obvious reasons.  Everyone loves them - even the kid up the road.  Went home and told his mum she should make them.  She didn't know what they were.

 

Already planning a casserole for late lunch Sunday before my son hits the road again.  Might leave tomorrow night to my daughter in law.

 

All just old fashioned comfort food!

Tasfleur, they are really just meatballs with a bit of rice in them that pokes out like porcipine spikes when they are cooked - well, a little bit.  They are cooked in tomato soup and yummy over mash.  I put baby spinich, celery, onion and carrot in them.  I'll find the proper recipe later.

PORCUPINE BALLS

 

Ingredients

  • 500 g lean beef mince
  • 1/2 cup rice uncooked
  • 1 onion finely chopped
  • 1 egg lightly beaten
  • 1 tsp crushed garlic
  • 2 tbs plain flour
  • 1 pinch Italian mixed herbs (I use dried or fresh parsley)
  • 440 g tomato soup

Method

  • STEP 1 In a large bowl, mix all ingredients together.
  • STEP 2 Shape mixture into large walnut-sized balls.  "Massage" well - helps keep them together.
  • STEP 3 Place in a suitable oven-proof baking container.
  • STEP 4 Mix soup with half a can of water and pour over meatballs.
  • STEP 5 Cook for about 45 minutes or until rice is cooked (it will take longer in a slow cooker).

Notes

You can cook the meatballs in a casserole dish for oven cooking, covered frying pan for stovetop or a slow cooker. Add a bit more water during cooking if necessary. Grated carrot and zucchini and other vegetables can be added to the meatballs for extra vegetable content. Serve with mashed potaoes and a green vegetable.

*****  Meant to say - I dont put flour in mine - I put 1/2 cup fresh multigrain breadcrumbs and also a splash of worcestershire sauce in with the tomato soup.  Breadcrumbs make the meatballs soft and melt in the mouth.
