Making the custard.
Ingredients:
1 and 1/2 cups or 375 ml of regular milk ( I use dairy farmers original milk, have never tried other brands)
1 and 1/2 cups or 375ml of regular cream (again dairy farmers)
60g Unsalted butter
1 x teaspoon of vanilla essence ( if I was making a vanilla slice with pastry on top and icing, I use 2 teaspoons of vanilla essence)
2/3 cup or 150g caster sugar
6 x egg yokes (700g eggs)
1/3 cup or 50g of corn flour
1/2 cup or 125ml or 125g of water
Nutmeg
The amount of corn flour will give you a soft but still firm custard, if you want it to be firmer add an extra 10 to 15 grams of corn flour but no more water
How to do it:
I prepare the egg yokes first and have the in a bowl so they will be at room temp and give them a whisk to break them up.
Also have the the water in a cup and the corn flour in another cup ready to mix when the time comes.
Have a hand held whisk ready.
1. Into a large saucepan, put the milk, cream, butter (sliced into cubes), the caster sugar and the vanilla essence.
2. Onto the stove top from anywhere to a medium heat to about 3/4 temp on the dial. (dont go full heat)
3. Keep stirring and until it has a noticeable boil, and remove it from the cook top.
4. Add the water to the corn flour and mix it thoroughly, when doing this, also give the custard in the saucepan the ocassional
stir so it doesn't develope a skin on top.
5. Add the corn flour to the custard and whisk it into the custard.
6. Then add the egg yokes all at once, and use the whisk to mix them in.
7. Put in back on the cook top and cook for another minute, (on medium heat) and keep whisking, it will start to thicken.
8. Take it off the cook top and continue to whisk, as it starts to cool a little it will become noticeably thicker, and will show signs
of sticking to the hand whisk.
9. When done, pour it into the cake tin and you may need to spread it a little.
10. Then sprinkle the nutmeg on to top.
11. Let it cool for about 5 mins and then put it in the fridge, it will need about 3 to 4 hours to set.
After it has set, remove it from the cake tin and onto a chopping board to slice.
I use a thin blade sharp knife, the custard tends not to stick to the knife as much because of the thinner blade.
I trim the sides off first, to square it up ( and usually eating the trimmed bits as I go) Then slice it into even pieces.
If all goes well you will be able to have a custard hit.
I hope I haven't missed anything.

Hey Trav, for a whizz bang baker, what's with the vanilla essence?
That's what you clean inside your fridge with.
I use vanilla extract to cook. Or vanilla bean paste. Much nicer.

You are correct, I call it Vanilla essence.
It is Vanilla extract. Queens brand makes two types.
One is Natural Extract and the other is Imitation.
I only use the Natural type. as per the pic.
(hope I don't lose a point for the incorrect wording. )
Oh, and I have used it to clean the fridge

Sorry - Trav.
Wrong wording & you are custard.
