I love raspberries.

 

My last trifle was made with raspberries and fresh berries but why are they so expensive at Christmas?

That's all worth a debate ... Danish pastries have icing, but they're not cakes ... and they contain butter (or they should), but they're not bread.

Now, I need another GLASS of WINE 🙂

Banana bread is baked in a loaf tin and has a heavier texture than cake. Eaten sliced and spread with butter/margarine. The recipe I use has 50g butter in it, a lot less than you would put in a cake. Less sugar too, I think.

I found a fabulous recipe for cup cakes using dextrose, made them this morning, still have to have a go at the icing but it has to be done on the day of eating. Italian meringue icing.

I'm looking for inspiration. I make two kinds of chicken soup: the traditional one with veges and stock, and a Thai one with coconut milk and ginger.

Today, I want to make a different kind of chicken soup to serve in homemade bread baskets.

I don't think either of my regular soups will work, so I'm looking for something different. Must be chunky, can contain carrots, cauliflower, asparagus, potatoes, onion, zucchini. Must not contain frozen or canned ingredients (except canned tomatoes or coconut milk or beans and lentils).

I've just looked at a zillion recipe websites and found nothing.

On Sunday, my family had a BBQ where everyone brought dishes. My sister and SIL brought a quinoa dish that they found on the cooking light magazine. It was light and very refreshing. I really liked it.

 

Even though it's a grain, quinoa is high in protein and high in fiber. A much healthier alternative to other grains. They used golden raisins as well as dark in theirs, used the mint instead of parsley..... plus they added a little bit of vinegar to it to balance it out. It was really good. So I thought I'd post it here if anyone's interested.

 

 

 

 

  • 1 3/4 cups water 
  • 1 cup uncooked quinoa
  • 1/2 cup coarsely chopped seeded tomato 
  • 1/2 cup chopped fresh mint or parsley
  • 1/4 cup raisins 
  • 1/4 cup chopped cucumber 
  • 1/4 cup fresh lemon juice
  • 2 tablespoons chopped green onions 
  • 1 tablespoon extra-virgin olive oil 
  • 2 teaspoons minced fresh onion 
  • 1/2 teaspoon salt 
  • 1/4 teaspoon freshly ground black pepper

 

 

  • Preparation:

 

  1. Combine water and quinoa in a medium saucepan; bring to a boil. Cover, reduce heat, and simmer 20 minutes or until liquid is absorbed. Remove from heat; fluff with a fork. Stir in tomato and remaining ingredients. Cover; let stand 1 hour. Serve chilled or at room temperature.

We never got to try the pizza shop with the long queue outside.

 

Do you remember the name of it Katy? Lloyd and I are going to a concert downtown, near the gaslight district, in a couple of weeks. It would be fun to go get pizza there before the show. If it was somewhat close....

i love my cat,really i do. but i am NOT happy with her right now!!  she tripped curtis earlier,and he dropped my lettuce knife. it shattered. 

i have no idea what the brand was,but it was white ceramic. i think it may have been overlaid glass? 

i have a glass knife,but the handle is too  big for my hand.

any recommendations for a brand or type? i have small hands,and i'm lefthanded,if that helps? TIA!!

Over the road was an Italian restaurant/cafeteria with an attached patisserie/gelato place (details are foggy after all these years). And, I think a little further down (away from the hotel was the pizzeria).

Like I said, we never tried it ... but we did try the above cafe/restaurant. We ordered antipasto (huge and amazing), a pizza, and something else. Absolutely awesome food.
