In my other account I sent items in a C5 envelope, in the back clearly state up to 500g and 200mm
My orders are FLAT, 250g and 100mm
Since last week I start receiving email from customers that they were left a collection card and when they go to the post office they said they need to pay extra because was "not enough postage"
I tell my customers to pay and email me the receipt for refund
I'm paying a lot of $5.65, $7.65 $9.10 and so on
I'm losing money and dont know what to do.
Any ideas? anyone can help please?

Just to clarify: are you using the C5 prepaid envelopes, or using your own stamps?

I had one last year as a seller. In that case they claimed I'd sent a C5 without any postage. I advised them that I only use prepaids and was prepared to take them to court over the $3.95 they claimed I owed. Crickets.
Do you have a return address on the letters? AP should claim the money from you rather than the buyers in that case.
Other than that, all I can suggest is to take photos of your letters, with a ruler, to prove the items are under 2cm. Then contact AP and give them that evidence, accompanied by a legal threat. The ombudsman is available for these sorts of issues if AP won't play ball.
I doubt it actually has anything to do with eBay. AP have no idea where untracked letters originate.

Thank you for the suggestions.
My items are vacuum sealed and flat all equally
And yes all my envelopes have a returning mailing address

The maximum thickness for the letter rate is 20mm - not 200mm. The latter measurement would be classed as a parcel

Always a bit confusing mmmmmms - however I think the OP means that his envelope was less than 2 cm
