How can I list an item for sale when I don't want to accept credit card as a payment option?

I don't use a credit card on eBay - I don't even own one.
and I ALWAYS pay by PayPal (unless I don't read the listing correctly and the seller only offers PayMate)
It's the only way to ensure Buyer Protection against sellers who do dodgy things like send broken or misrepresented products.

and Digi, how does one go about a chargeback?
Do they just rock up to their bank and say "this seller is dodgy" I want a refund? or is it a little more detailed than that, say is proof required or do they just take the buyer's word for it?
I posit the reason for the concern is entirely different.
