basically a buyer won my cars dvd i have listed on my ebay profile that i post once a week and the buyer is now cross because it wont get there for a birthday gift this is the message

so now they seem upset because i didnt post it right away even though it is on mys seller terms that i post when my mum can help me

If you post it on Friday it still has a good chance of reaching the buyer by Wednesday if things go smoothly. If they're in the same state, it may even reach them on Tuesday.
As far as whether you're right or wrong, you're right as far as them complaining about it not arriving by the 22nd. The estimated delivery time (which is a combination of your handling time + payment method + shipping service) states a minimum of 6 days, with a maximum of 11.
If the item doesn't arrive after the 11 days, they may have a case but the fact is that you clearly stated it may take upto 11 days... so it's not your fault. They could have read that before they bid.
What is your handling time set as? You may want to adjust it to allow more time, incase a buyer purchases something on a Monday.

im pretty sure its set as 5 days thanks i feel betetr being from tasmania i can wait up to 2 weeks to get blu rays etc so yeah i think the buyer should have read my terms first

This is just a suggestion, because, as you state your postage terms are clear, but it may be worth adding something about postage in your description as buyers don't always click on postage details.
Of course they may not read all of description either, but at least then you have all areas covered.
Don't stress - not worth it as it's not your fault.

I can't find anything in the listing that states you only post once a week and nor does it state what that one day is, all I could find is that you state you usually post within 5 days of payment.
So the buyer can't see it, I can't see it, so who can see it?

I notice you have revised the listing 4 times, is that really necessary because it can be a turn off for buyers to see you constantly altering details?

The postage terms aren't explicit, but it's still plain to see for anyone who actually looks at the details of any listing, without clicking on any tabs to see more info, the reasons why etc, are ultimately irrelevant IMHO anyway because they don't change the facts or when an item will be posted (the estimated delivery times from eBay take the seller's handling time into account - on the completed Cars DVD it just shows expected delivery in 6-11 days, on the current listing it names the dates, Estimated between Mon. 26 Nov. and Mon. 3 Dec).
That being said, I highly recommend making postage times explicit in the future, just a simple statement in big, bold font (eg please note that this item is subject to a handling time of up to 5 business days after receiving payment).
In regards to your buyer, I would personally accept some of the responsibility here for not bringing more attention to the handling time, and just send them a message apologising for any confusion or misunderstanding and that the 5 day handling time (as noted in the listing) is due to unavoidable personal circumstances, then ask them how they would like to proceed.
