  I've been reading, and watching shows about food around the world, it's diversity and its similarities. And with Christmas coming, I thought I'd ask what your favorite special to the holidays dish is? 

  One of mine is Whoopee pies, one of my DILs is from Pennsylvania Dutch country and she makes them for us only at Christmas. They are so goood!

I'll bite - how do you freeze raw eggs out of the yolk ?????

You can freeze eggs by mixing them slightly - don't overdo the mixing - no bubbles.

 

With a pinch of salt  (don't forget this tidbit when using them in a recipe)

 

Then freeze the mix in ice cube trays.  For your recipe, one cube is one egg (or 3 tablespoons is one egg)

Not sure what fritattas are, will Google them ............. No need to freeze my  eggs, they  will keep for weeks in my fridge, not like the supermarket ones that have been around ages before the hit the shelves.

You don't know how glad I am to see someone else who does similar to what I always do now.

I've had friends who say there's no need to cook bacon or onion or zucchini or whatever before it goes in but I learnt my lesson a while back with a zucchini slice. Put in all in raw as per the recipe and it just wasn't right by the time the rest was cooked. Now I saute or zap slightly for most of the things I toss in. I do think it gives more flavour too, especially with things such as onions.

Yes it is versatlie. Also, you can use gluten free flour successfully too for anyone who is coeliac.

Right on the money, Stawka, I use old ice cube trays too. Of course, I use them to freeze lots of things, lol! Many decades ago, the first time I tried to freeze eggs, my MIL neglected to mention the " don't overbeat them" part. Let me tell you, frothy raw eggs, they spill out during the expansion from freezing and you have to chisel them off the freezer shelf, lol!

Mine are more like a spicy french omelette, very puffy and lots of fillings of different kinds. I have  set of 6 inch diameter cast iron frying pans to make individual servings, I wonder, can we cook your quiche recipe in cast iron, do you know? If not, we'll try my cassoulet( I think that's what they're called) dishes. That's today's project for supper.
