It is a shame this has happened, I cannot understand why it has happened to a good seller like yourself.
If you have proof of sending, contact eBay about it and provide the evidence to them.
It could not have been over one customer.
You need to have a look at your seller dashboard and check your defects percentage, that may have something to do with it.
Once defects get to be more than 2%, or seller cancelled sales get to more than 0.3%, problems can happen.
Did eBay send you an email about why your listings were suspended?
What did they say?
